Savory Corn and Pepper Muffins – Dorie style

IMG_8895.JPG Tuedays with Dorie is the brainchild of Laurie of Quirky Cupcake.  Its been one year now.  I think that is long enough for the use of the word tradition.  Right?  Some have been at this for a whole year.  Me, I’ve only been around since this past summer.  The whole reason for this blog was to bake through the book written by Dorie Greenspan, Baking From My Home to Yours.  I knew this way I would bake recipes I would never have chosen otherwise.  I think that is safe to say for the whole crew in this baking community.  One of the biggest “Traditions” in this baking group is the recipe selection made by the next member on the roster.   This weeks member is Rebecca of Ezra Pound Cake.   Delightfully, it was her turn.  Its a really big deal to sit down with a 472 page cookbook and choose “ONE” recipe for your week.  She did it though.  YIPPEE!!  You’ll love reading her blog.  She’s very witty and apparently her food rules.  You will also find the wonderful recipe for these tasty little morsels. After living in Texas for 14 years, I’ve developed a distinct affection for chili’s.  So these little “Morsels” were getting right in line with my taste buds.  Pretty much staying with the proportions for the chili powder, and I used basic chili powder, rather than a specific type of chili powder.  They are really tender and the tooth is crumbly, I think because of the amount of corn meal.  I love cornbread, particularly toasted, buttered and drizzled with molasses.  Yummo.  Like dessert.  However, I also love cornbread with jalepeno, cheese and onion.  Oh yea, an occasional corn kernel  is certainly welcome too.  The Savory Corn and Pepper Muffins paired well with Chipotle Chicken  and Tomatoe Soup from a fellow TWD member.  It was a comforting mix for a winters night supper.  By the way, while I was taking the decorations off the Christmas Tree this past weekend.  A special program on Discovery channel came on about the harvest of corn and the production of so many different products made from corn.  Corn is an amazing little kernel.  Did you know that a combine (you know that huge machine used to harvest the corn) can cost as much as $400,000.00.  Yes, thats right nearly a half-million dollars.  WOW!  Did you know popcorn, that wonderful little snack you eat at the movie theater pops at 135 PSI.  Thats more pressure than is in your tires on your car.  Way more.  Corn is the origin of many different products you use every day.  Including the cornmeal used to make these tasty little muffins.

    Love you, love your blog. I’m glad these worked out well with the chili…I need to try that recipe! Now cornbread with molasses is something I’ve never had but it sounds sooo decadent!

    Looks delicious! I skipped out this week because I forgot to buy the ingredients at my military grocery store that I only get to once a week… oh well! But now I know there’s a good corn muffin Mexican style out there. Thanks for sharing!

    That dinner of yours sounded great. I also used a basic chili powder and it was really good with roasted peppers. When I roast peppers I do it under the broiler in my oven. It works fantastically well. I actually used to do it on the stove-top, but then I discovered the broiler and changed my ways.

    i’ll have to try that soup – it sounds great. your muffins turned out nicely – and i see that corbin is learning to play around w/the settings on the camera a bit now – wish i knew how to LOL

    Question for you? Can I come over for dinner? HAHA. That soup sounds yummy with the muffins. BTW I lived in Texas for a couple years when I was younger and my hubs says if I get excited or mad my Texas twang comes out when I talk really fast. I guess once a Texan always a twang right? ;)
