Allspice Crumble Muffins for TWD

What theory do you subscribe to regarding caloric intake? Generally, moderation has proved to be fairly effective along with regular gym time. You know a splurge now and then sort of sneaks in there. Okay, yea lately a lot. sssshh So, today as I was at the gym, the subject of what was being baked or what type of food I was “cooking up” became the topic for the rest of the hour. That was when I thought I would give it a whirl with a different twist. When baking, I almost always follow pretty closely or exactly to the letter how the recipe is written. Today was different. I modified the flour with 1 cup AP, 1/2 cup whole wheat, 1/2 cup kamut flour. I replaced the butter with unsweetened applesauce. Two large eggs were modified to one whole and one white. I followed the rest of the recipe as written.
Well, I suppose you are wondering what became of all the efforts to reduce the fat content? The Allspice Crumble muffins reduced fat version, actually weren’t that bad with out the butter fat and minus one yolk. Don’t get me wrong. I love living the good life just like anyone else. Like butter in my baked goods. No shortening for me. The flavor with the brown sugar, allspice and optional lemon zest (included) was quite comforting and nice.
COMO has had grey, cool and partly rainy weather lately. I think that is what they call Fall. Darn, really liking warmer weather right about now a whole lot better. Does a warm sunny beach sound pretty good? Yea, that’s what I was thinking too. The point is, Kayte of Grandma’s Kitchen Table lovingly and thoughtfully chose this weeks recipe for all the bakers this week. If you are reading this Kayte, thank you for this choice. Nice of you to choose a simple, “go-to” muffin. I had all the ingredients on hand even the whole milk which I keep for baking and I really use it. Great job figuring out substitutions to make these a bit healthier! I’m always so hesitant to sub for the butter but I really just need to get brave and try it. Your muffins look wonderful!

My favorite part each week is seeing what people sub or add-in and learning from all of that…yours sound great: There is a time for everything, right? I never used to mess with baking measurements either, but recently I’ve realized baking is more forgiving than I thought. Or maybe I’m just forgiving if a delicious baked good isn’t perfect texture or look-wise.
Anyway, I’ve started making up cookies and loaves with reduced sugar or oil substitutes. I love butter in my baked goods, but I’m living alone now, which means anything I make will likely be eaten entirely by me.
By the way, I love allspice!

hmmm… interesting modifications. i haven’t gotten around to subbing ap flour for whole wheat but maybe one day i’ll take that leap
Right now I’m envying your gym friend! I’m glad they were good with your healthy substitutions. For some odd reason I always forget to make the healthy substitutions! I read cookbooks while on the recumbent bike and dream of what I’m going to make over the weekend.

I SO wanted to make these this week, but I ended up being put on crutches for two weeks (grrr!) and then I went home for Thanksgiving weekend and didn’t make it back until Tuesday night. So no muffins for me. I will try them at the end of the month, though, since I won’t be making the cherry chocolate thingy.
I’m glad the healthier version worked well for you, and I may try that. One thing I am just discovering is pumpkin works like a charm in place of fat, and it has very little taste to it, too! I may try using pumpkin puree instead of applesauce in some things and see how that works.
Oh, and I love 2% chocolate milk. If I’m trying to be good but need a big chocolate fix, I’ll grab some of that. And if you want a REALLY good hot chocolate, use heated chocolate milk instead of hot water. Mmmmmmm.
And now I need a snack.
Your substitutions go well with the flavor profile of the muffins. I partially replace white flour with whole wheat in a lot of recipes so I can tell myself i’m being healthy

Nice job lightening the muffins up. I did a little of that, too, but turned this recipe into a chocolate chip coffee cake (the chocolate probably outweighed the healthy subs!) Great post.
